Rooted in the soul of Filipino heritage, this special menu pays tribute to the eight brave provinces—Cavite, Batangas, Bulacan, Pampanga, Nueva Ecija, Tarlac, Laguna, and Manila—that first rose in revolution and helped ignite the flame of our freedom. Their courage is forever etched in our history, and their rich culinary traditions are now honored through every bite.

Guests are invited to savor an array of regional favorites, each dish capturing the distinct flavors, stories, and pride of these provinces:


Manila – Beef Mechado

A classic Filipino-Spanish stew of tender beef simmered in rich tomato sauce with potatoes and carrots. As the nation’s capital and cultural melting pot, Manila showcases time-honored dishes like Mechado that blend colonial influence with Filipino heart.

Cavite – Bacalao Croqueta

Golden croquettes filled with creamy mashed potatoes and savory salted cod—an homage to Cavite’s coastal roots and Spanish heritage, where bold flavors and global trade history come together on the plate.

Batangas – Batangas Lomi

A thick, comforting noodle soup with pork liver, kikiam, and a garlicky broth. Batangas brings strength and warmth to the table with this beloved dish known for its hearty richness and generous servings.


Bulacan – Pastillas Cheesecake

A luscious fusion of creamy cheesecake and sweet pastillas de leche, lightly dusted with sugar. Known for its artistry and tradition, Bulacan’s love for confections shines in this modern take on a local favorite.

Pampanga – Sinigang sa Bayabas na Bangus

Bangus (milkfish) gently simmered in a guava-soured broth with native greens. As the culinary capital of the Philippines, Pampanga brings elegance to simplicity with earthy, fruity flavors that comfort the soul.

Nueva Ecija – Tinumis Tagalog

A distinct pork blood stew that’s sour and garlicky, enriched with tamarind leaves and local aromatics. Nueva Ecija, the “Rice Granary of the Philippines,” brings humble ingredients to life with hearty, rustic flavors.

Tarlac – Pinangat na Pompano
